Black Rice & Baby Kale Salad w/Peaches

Serves 8 (can half the recipe)


3 Cups Black Rice (uncooked)
3 Peaches, diced
1 Cup pomegranate seeds
4 Cups baby kale
2 Tablespoons toasted sesame seeds

lemon juice from 1/2 lemon
2 Tablespoons grain mustard
1 Tablespoon agave (or honey)
1/2 tsp salt
1/4 tsp pepper
1/2 Cup apple cider vinegar

Cook the rice, about 30 minutes, until it's chewy. Place kale in large bowl and pour hot rice directly over kale to help it wilt (drain excess water from rice first). Cover and let sit for 5 minutes.

Mix together all ingredients for dressing and add to rice/kale mixture. Mix well. Add peaches, pomegranate seeds and sesame seeds.

Serve warm or cold.
